It took more than 30 years to perfect the right technology: IQF (Individually Quick Freezing), which "envelops" the fiordilatte mozzarella in cold temperatures, protecting its structural and organoleptic characteristics. A unique nitrogen technology allowed us to obtain a fiordilatte mozzarella that lasts 18 months while retaining the same taste, aroma and properties as freshly produced mozzarella.
We use IQF technology on the 2g and 5g cubes, the julienne cuts and cherries; designed to achieve perfect freezing even right through to the core of the fiordilatte mozzarella.
